Kale and beet salad
1/2 ripe avocado
2 Tbsp. white wine vinegar
1 tsp. Dijon mustard
3 Tbsp. extra virgin olive oil
salt and pepper
8 oz. baby kale
1 small red beet cooked peeled and thinly sliced
1 crisp apple cored and cut into thin wedges
1/2 cup chopped walnuts or almonds (optional)
1. combine avocado, vinegar, mustard, and oil in a food processor. Pulse until smooth (it will be thick.) Season with salt and pepper.
2.Combine Kale, beets, apple and walnuts/almonds in a large bowl.
3. Toss with avocado dressing
4. Season with salt and pepper (optional)
Mescaline and beet salad
16 oz mescaline
1/4 red onion slices
1 large beet cooked peeled and diced
4 oz. shredded carrots
3 green pears sliced into wedges
1/4 cup balsamic vinegar
1/4 cup pure date syrup or raw honey
1 Tbsp. chopped garlic
1/2 tsp. salt
1/2 tsp. black pepper
3/4 cup extra virgin olive oil
sliced almonds or chopped walnuts (optional)
1. Mix all dressing ingredients
2. Put pear wedges on bottom of platter
3. Add mescaline, diced beets and slices of red onion
4. Pour dressing on top
5. Add sliced almonds/chopped walnuts
1/4 cup tahini
1/4 cup water
1/2 lemon juice
1/3 cup date syrup
Combine all ingredients and pour over your favorite salad. You can add more water if you want it more diluted.
